Ingredients
2 15-oz. cans of black-eyed peas
2 15-oz. cans of whole kernel corn
3 medium stalks of green onions, chopped
5-6 pickled jalapeño slices, chopped
1 teaspoon of minced garlic
Italian salad dressing
3 Roma tomatoes, chopped
2 avocados, chopped (optional)
Instructions
- Rinse and drain the black-eyed peas and corn.
- Combine black-eyed peas and corn in a large bowl with chopped green onions, garlic and jalapeños, and Italian dressing to taste.
- Let chill for at least three hours.
- Before serving, add the chopped tomatoes and avocados.
Serves 6-8 people. For every two additional people, add one more of each ingredient.
